Chef Heather Mordue started baking and canning at a young age with her grandmother. This is where she first developed a love for local seasonal ingredients. Heather's first industry job was as a breakfast cook in her hometown of Binbrook, Ontario. After completing her studies in Geography at McMaster University, Heather decided she missed the rush of the kitchen and enrolled in the culinary program at Niagara College. In 2008 Heather accepted a position as the Bakeshop Assistant at Arowhon Pines in Algonquin Park. After the season, Heather moved to Toronto and worked for Oliver and Bonacini Events, where she was part of the opening pastry team for The Toronto Board of Trade and Malaparte as well as joining Chef Rob Rossi as the opening pastry chef for his restaurant Bestellen. From there, Heather started working at one of her favourite places to eat in Toronto, L’Unita Enoteca in Yorkville. There she was able to create dishes that combine simple Italian flavours with Canadiana cuisine as the pastry chef and pizzaiolo.
Looking for a change from the fast pace of the city Heather decided to return to Arowhon Pines in Algonquin Park as the Pastry Chef for the 2014 season. She is very excited to be working again with our Chef, David Cooke and is looking forward to using the onsite and local produce in her pastries.
